Avocado Margaritas
It’s hot. You NEED a margarita. If you have had the pleasure
of venturing into Laredo’s on Queen Anne, and happened to order the ethereal liquid experience that IS their Avocado Margarita...tossing a bit of ‘cado into
the blender shouldn't sound too nutty.
A couple of years
ago, a friend who knows me (and my love of creative culinary concoctions) better than anyone, introduced me to Laredo’s. The Fajita Fries were an easy sell (Um. YUM.)
– the Avocado Margarita elicited initial hesitation. I am SO glad I moved past my “I think I would
prefer that on a chip” reaction.
This cool, creamy, refreshing drink is now one of my
favorites. Here is my spontaneously generated version from this past weekend. It
actually tastes more like a smoothie than anything, which is kind of… wonderful
(not to mention, perfect for the bout
of lovely weather we are having) :]
Avocado Margaritas
(4 cocktails)
6 oz. blanco tequila… or you know… more.
¼ cup fresh lime juice (2-3 limes)
1 lime (sliced)
2-3 cups ice
1 oz. Grand Marnier
4 oz. sweet and sour mixer
1 ripe avocado (pitted and peeled) – note: I used ½ an
avocado, and it was lovely!
1 oz. simple syrup (optional, but I like that hint of
sweetness)
And…BLEND. Top with a thin slice of citrus. Done.

Now I know what Im making my house guests this weekend. ever had avocado bubble tea? so good.
