Buffalo Chicken Nachos


Buffalo-wha?!? The chicken that gives these nachos that extra oomph can be used in an impressive array of dishes. Buffalo chicken quesadillas, mac-n-cheese, melt, waffles, etc, etc… BUT my favorite use by far, is to adorn a pile of nachos with this delicious concoction. Make this NOW.  ;]
Buffalo Chicken Topping/Filling


1/3 c. Franks Hot Sauce

¼ c. Feta cheese

1/3 c. Ranch dressing

¼ c. Cream cheese

…oh and a chicken.

1 Whole roasted chicken (pulled-~ 2 cups)- (you can roast one yourself, but, eh...)

 

Grab a fork and mash all of the ingredients together, you are ready to assemble some nachos!
 
Buffalo Chicken Nachos
(Serves 4  as an appetizer / or me for dinner…haha)

½ Bag of fresh, crunchy tortilla chips

½ c. Tomatillo salsa

1 c. Buffalo chicken mixture

2.5 c. Shredded cheese

½ Can of black beans

¼ c. Plain yogurt for topping…I usually use this instead of sour cream… makes me feel better about eating an entire plate of nachos. Yogurt=healthy, right?? ;]


This is a 2 layer project.
 
Throw down about ¾ of your total allotted chips.– toss on 1.5 cups cheese, ¼ c . salsa, ½ can of black beans, ¾ c. chicken. Then, sprinkle the remaining chips over all of that deliciousness.
 
Scatter the remaining ingredients on top and pop that plate in the oven for 10-15 min at 400*. When hot and gooey, top with the yogurt and serve (or eat out of the pan by yourself on the couch… one of those)

I almost left out the most crucial step… give the yogurt container (with residual yogurt) to a Great Dane so that she can run around with it on her snout, providing entertainment while you dine  ;]
