Kyle’s Monster Cookies


These cookies are amazing, and rather addictive. No, really! They are fantastic because they are “basically” like protein bars….well, with a good bit of fat and sugar – but, eh. These are naturally GLUTEN FREE- that’s healthy, right? I should probably have just changed the title of the recipe to “Healthy Protein Bars” … then I would feel better about how many of them I consumed prior to bringing them in to work the other week -Ha!

This recipe is courtesy of my sister (aside from a few tiny adaptations), since she doesn’t know exactly where she picked it up… that attribution will have to suffice.



Healthy Protein Bars Kyle’s Monster Cookies

Makes about 2 dozen

1/2 cup softened butter
1.5 cups creamy peanut butter
1 cup brown sugar
1/2 cup white sugar
3 eggs
1 tbsp vanilla extract
1 tsp corn syrup
2 tsp baking soda
¼ tsp sea salt
4.5 cups oatmeal
1 cup chocolate chips (any variety – I used dark chocolate)
1 cup M&Ms ( I actually used peanut butter M&Ms – the more peanut butter the better, eh?!)

 

Blend both sugars into the softened butter and peanut butter in a large bowl.

Drop in two eggs and the vanilla- stir until combined!

Drizzle in the corn syrup, sprinkle the salt and soda over the mixture-then throw in the good stuff (M&Ms, oatmeal and chocolate chips!)
 
 
 
 

Plop that delicious mixture onto a large baking sheet in ¼ c. portioned scoops.

 
Bake at 350* for 12 minutes!

 
*Do not over bake...unless you plan on using them in the foundation of the home you are constructing.
