Peach Crumble
I was always ridiculously
excited when an occasion rolled around that prompted my grandmother or mother to construct an apple pie, one of my absolute favorite things
– it always had a delicious buttery “crunch top” to it. More often than
not, it is what I ended up eating for breakfast following whatever dinner party
the pie was *actually* meant for. I have adapted and experimented with the “crumble
top” over the years to incorporate it into as many things I consume as possible.
One of my most recent successes has been this peach crumble. It is spectacular with a heaping scoop of vanilla bean ice cream OR with a generous dollop of freshly whipped cream (flavored with a bit of bourbon and vanilla extract of course)- EVEN just by itself... I always tend to add cream to things to achieve maximum decadence while dining.
(Serves about 4)
Filling
5 fresh peaches
3 tbls instant tapioca pearls
3 tbls unbleached white flour
2 tbls white sugar
2 tbls brown sugar
1 tsp vanilla extract
Topping
½ c. crumbled graham crackers
½ c. white sugar
½ c. brown sugar
1 c. unbleached white flour
½ c. sliced almonds
½ c. oats
4 tbls flax seed
1.5 stick of butter
Peel and slice your peaches into approx. 1 inch chunks. Toss the first 6 ingredients into a large mixing bowl- then plop that into a baking dish or pie pan of your choice. I used an 8x8 deep dish pie pan.
Now its time for the fun part! – Now that the peaches are in the baking dish, dump all the ingredients (aside from the butter) into the large mixing bowl, and blend. Once the mixture is evenly distributed, drizzle the melted butter over it.
Using a fork, or your hands, incorporate the butter into the dry ingredients until everything in the bowl has been moistened.
Top the peaches with the crumble mixture until well coated , then pat down the crumble top gently.
Place in the oven at 375* for about 25 minutes (until the top turns golden brown and the peach juices begin to bubble around the rim of the baking dish).
***I know, you are thinking: “WAIT! I have at least a 1c. of extra topping?? The measurements in this recipe are off” ...
This topping keeps great in the fridge for a few days, so a few mornings from now…. chop up 1 apple and 1 pear, sprinkle with a bit of flour and sugar- and you have a completely different mini-crumble experience to enjoy all over again!

Looks delicious! I've only made peach cobbler once, never a crumble. Love the idea of extra topping for an impromptu yogurt n fruit breakfast or whatever else one can create.
ReplyDeleteRae- I love cobbler as well! Having an easy-to-assemble treat a few days after baking is definitely a nice incentive to making the crumble ;]
